DAVIS RANCH RANGE-FED BEEF

The Davis Ranch has been producing beef for the past 60 years under the care of Paul and Joann Davis on their ranch in west-central New Mexico in the El Morro Valley. Since 2000 Anita Davis and her husband Bob Schafer, have been managing the ranch following sustainable practices and an all natural commitment which does not use synthetic additives, hormones, or antibiotics. Our bulls, cows and calves are mostly Angus with a small amount of Hereford mix, fed on the range with native grasses and herbaceous plants. They graze contentedly in the summer on the free range and are supplemented in the winter with alfalfa and oat hays grown locally and in the Rio Grande valley. These practices produce a beef that is more tender and flavorful, with a lower fat content and higher in omega acids. We are dedicated to using the most stress-free practices in handing and caring for our animals. Visitors comment on how calm and gentle the animals are when they help us in rounding up or moving them onto the next pasture.

PROCESSING OF THE BEEF

In order to sell our beef to the public, we are required to have our animals killed and processed in a facility under USDA inspection. Currently, our only option is in Durango Colorado, where the proper certified procedures are carried out and the packaged beef is ready for sale in approximately 3 to 4 weeks. This includes humane killing, 21-day dry aging just above freezing, separating the halves into steaks, roasts, and ground beef, packaging into labeled cuts, and freezing.
